I love using einkorn flour because it offers several nutritional benefits and is easier to digest compared to modern wheat. Not only is it a good source of protein, fiber, and essential minerals, but it also contains higher levels of antioxidants. Delicious, fluffy, and filling Saturday morning pancakes with all of those nutritional benefits? Yes, please! These are truly the best fluffy einkorn pancakes and one of my go-to favorites.

These einkorn pancakes cook beautifully on a griddle or a cast iron pan. You can also substitute coconut oil in place of butter if desired or make them into waffles instead of pancakes. Pair these pancakes with warm strawberries or blueberries, butter, and pure maple syrup for an oh-so-delicious breakfast. If you’re looking for a hearty breakfast to start the day off right, bacon and eggs on the side will complete the meal.

To ensure your pancakes stay pillow fluffy, wait until they cook all the way through and avoid flipping several times, as this can flatten the pancake. This will give the baking powder time to do it’s job. Following this simple step will yield the best fluffy einkorn pancakes. The other thing you may notice with einkorn flour is that the all-purpose and whole wheat have just slightly different textures. The all-purpose einkorn flour will yield the fluffiest pancake.

These Einkorn pancakes are fluffy and delicious! They pair perfectly with warm strawberries or blueberries, butter, and pure maple syrup.

Ingredients
  

  • 1 3/4 cups all-purpose einkorn flour
  • 1 tbsp baking powder
  • 1/2 tsp sea salt
  • 1 1/4 cups whole milk room temperature
  • 2 eggs room temperature
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 3 tbsp butter melted

Method
 

  1. Whisk together the einkorn flour, baking powder, and sea salt.
  2. In a separate bowl add milk, eggs, maple syrup, vanilla extract, and melted butter and combine well.
  3. Add the wet ingredients to the dry ingredients and milk until combined.
  4. Let sit for about five minutes and then give it another stir.
  5. Grease a griddle or cast iron pan with butter and pour desired amount of batter for the size you wish your pancakes to be.
